Chicken Soup, Hold the Noodles

The cool summer weather we have been experiencing here in New England has been giving me earnings for Fall weather and food. So, this past weekend I decided to make chicken soup. No, not chicken noodle soup. I decided I would have a grilled cheese sandwich with my soup, so I decided to hold the noodles (not literally!). I did not follow a recipe, but was pleasantly surprised at how tasty my soup turned out. Here is how I did it… (more…)

Bright Ideas for Coping With the Blues

I was recently thumbing through a magazine that had a really great idea for coping with the blues. Depression is something that I have struggled with for years and I know the same is true for many women and mothers. The idea entailed making a kit with all the little things that make you happy. I don’t remember what the actual name of this kit was titled in the magazine, but I think “Light Blue Kit” is a fitting name. Light blue, because it will lighten your blues when you are feeling under the weather. So, when you are in need of a little pick-me-up, grab your kit filled with some of your favorite things. To make your kit, start with a box that has a nice fitted lid to it. I really like the photo boxes that are available in various colors and designs. Oh, wouldn’t it be too cute if your box was light blue? You could even write the title on the lid. Here are a few ideas for kit fillers. Please come back and share any that you come up with!

  • a prayer card-I have one of those pocket cards with the “Footprints” poem on it. What a great reminder that no matter how tough times seem to get, God is ALWAYS there to carry us through.  You can make a prayer card by typing the poem in a Word document and then printing it off on your favorite card stock. Then, cut to size.
  • a picture-Choose one of your favorite family photos or a silly one of you and a friend or beloved pet.
  • a teabag-As you rummage through your kit, treat yourself to your favorite cup of tea. Chamomile Tea is known for its relaxing qualities. Make sure to drink it out of your prettiest cup!
  • a candle-Aromatherapy candles can be a great way to lift your mood. Many stores (my faves are Bath and Body Works and Origins.com) offer a variety of scents that range from relaxing to energizing.
  • chocolate-Studies show it really does help boost your mood (I always knew it!). Keep a few Hershey Kisses or some of those yummy Lindt truffles that are individually wrapped! Careful-those may have you visiting your kit every day!
  • a few gift wrapped items-This may seem silly, but I think it would be fun to put a wrapped gift in your kit. I mean, who doesn’t like to receive a gift? Next time you are at Target, go through the dollar bins and collect a few things that are cute to you. It doesn’t even have to have a purpose. It can just be something you think would be fun or cute to have. For example, a journal, one of those mini  _____ for Dummies books, a Hello Kitty hairband, a visor, etc. Wrap the items up and keep one in your kit. The next time you open your kit, you will be  surprised with a gift!

Mini Cupcakes

I recently came across a really fun baking site. At Bakerella, you can find recipes and the how-to’s for baking some tasty treats that also happen to look amazing. If you love cupcakes as much as I do, check out the “cupcake pops” and the “cupcake bites“. I can’t imagine that they wouldn’t brighten up any day!

GIANT Cupcake Pan

At one point, I was planning a birthday party for myself and wanted to have cupcakes instead of just one big cake. Aside from being cuter than cake, cupcakes offer the perfect serving size. They have also become quite a popular trend in terms of serving cake to a crowd. Many people opt to have a cupcake display at their wedding reception instead of a tiered cake. These displays are beautiful and can be quite elaborate. I then started to wonder if there was a cupcake that could be made bigger in size to look more like a cake. This got me excited. You have to know one thing about me-I LOVE cupcakes and cake in general, but cupcakes are the one thing that really make me light up. Just to see a cute little cupcake with its sprinkles just makes me happy and well…like all is good in the world. So, I came across a pan that would bake up a big cupcake. As I prodded around some more, I came across something even better. It’s the GIANT CUPCAKE PAN! Are you kidding me? There is no doubt in my mind that I WILL HAVE this pan and I WILL have that GIANT cupcake EVERY birthday for rest of my life!

Good Christian Reads

Aside from the Bible, there are many good reads available for Christians. I have found that many of these books are an inspiration and can lift you up when times are tough. I have also found that this particular genre is very hard to find in a public library. Go figure. That is a major downfall for me, because I do try to make use of my public library as often as I can (which happens to be at least once a week!).

This book has some good tips on how to incorporate healthy choices into your life in order to make a lifestyle change. That is, of course, how one becomes healthy successfully!  I do sometimes question some of the things Joyce has to say about what God “thinks” and about what constitutes living a Christian life. She seems a little liberal/motivational speakerish at times.

Love this book and Beth Moore! Check out the study.

I love John Hagee! I watch him preach on the DayStar channel whenever I can. I love how knowledgable he is about the Bible and how down right blunt he is when it comes to teaching how we should all live God’s word.

Help Yourself

Here is a list of some really helpful books I have read. I have taken away more than one tip from each one that has helped me better my life.

SELF-HELP:

This would make for a great book study with your favorite group of gals. This book offers a week-by-week, easy to follow plan for all the areas in a woman’s/mom’s life. Love it!

How to plant a garden…

For the past few years, my thumb has gotten greener and greener. It has taken those years to educate myself on how to produce the results I want. I have also experienced A LOT of trial and error. As a beginner gardener, it is normal to feel a little nervous about starting any kind of garden. There is a science to it, so planning and preparation are key. You will have to keep in mind that going through the trial and error are also necessary. You will kill things! That is unfortunately how you will learn how to be a gardener. Hang in there though, no matter what happens! There are just too many reasons not to. To name a few…

  • gardening is fun
  • it gets you out in the fresh air
  • you get to take part in the cycle of life
  • it gets you active
  • it gets your mind off all the junk in life
  • the product is good for your health
  • it is cheaper and safer to grow your own produce
  • people will envy you for being successful at it-let’s be honest, some people really do kill everything they touch

The first steps to planting your garden involve the planning. In order to achieve success, you have to plan it out! Start by making a list of your favorite kinds of flowers or vegetables (depending on what type of garden you would like to have). It has been my experience that growing flowers is easier than growing vegetables. This is obviously because food for me is also going to be food for other living things, so there is much more attention that needs to be given to a vegetable garden. That’s not to say that you won’t get some visitors to your flower garden!

Once you have your list, assess where you will put your garden. Take special notice of how much space you have available and the amount of light the area receives throughout the day. This is very important, because you will find some plants like only morning sun while others prefer afternoon sun. Other plants want sun all day long. Take notice of overhanging trees that may also shade the area at different times of the day.

Vegetables. Yummy, nutrient-rich, colorful vegetables! Maybe you would like to have a fresh garden salad throughout the summer months. There are many varieties of lettuce, so think about your favorites. Maybe you would like to add some herbs to your salad or make a dressing from them. Herbs are a great addition to the garden and can aid in keeping pests away. Many plants, including some vegetables and herbs can thrive in pots. If ground space is an issue, that may be another alternative to consider.

I recently found some great plans available online for several different garden types. I have also found some great books from my local library that are specific to the area I live in. You can find my list here. The online plans can be found at Better Homes and Gardens. You will have to sign up to become a member of the site, but it is free and full of benefits. Once logged in, you can download several different plans based on your needs (All-American Vegetable Garden, Summer Garden, Fall Garden, etc.). These plans will offer some insight on which plants grow best together and how to arrange them in your space. If you are starting from seed, read the seed packet for specific spacing directions. Many seeds can be started indoors and then transplanted into the garden. This is how I prefer to garden-starting from scratch. This does require more time, patience, and tending to. As you become a more experienced gardener, you will come to find that you will plan for next year’s garden well in advance. It is wise to gather seed catalogs from your favorite producers to assist you in your planning. You can also view online catalogs and purchase seeds straight from the source. One company that is well-recognized for its organic seeds is Park Seed. They also sell a variety of plants ready to be placed directly in the garden or your favorite pot. These are perfect for the beginner gardener. Another great place to buy online and gather information is at Burpee. You can also check your local nurseries or stores like Home Depot and Lowe’s offer some healthy plants at a reasonable cost.

The next step is to determine when to plant your garden. Depending on which zone you live in, the time to plant your garden will vary. Again, follow the directions on the seed packet so that you are planting according to your zone. Why is the zone important? Because someone who lives in Arizona will need to plant differently than someone living in Massachusetts. Good luck and let me know how your garden goes!

You can view the plans for my garden and check out my pics here.

For the love of reading…

I LOVE to read! Here is an on-going list of what I have been reading in 2009. You can also check out others that I have read by just clicking on the genre… Health & Fitness, Christian, and Self-Help.

FICTION:

I absolutely loved this book! What an amazing writer! She combines the science of making exquisite coffee with romance and murder mystery. She has written several of these “coffee” murder mysteries that I hope to read soon. I just need to request them from another public library.
